Parmigiano Reggiano PDO aged 18 months: the perfect balance of sweetness and flavour, more intense than the 12-month and still mellow. Made by Caseificio Saliceto, near Parma, only with milk from its own cows, raised on the slopes of the Apennines. Each piece is cut by hand from the wheel, so its weight varies.
